Gringo Bill Salsa

Ingredients:

12 Tomatoes

1 Whole White Onion

4 Cloves of Minced Garlic

30 Peppers (or to taste)

Vinegar/Water Mix (1:4) add as needed for thickness.

Salt (to taste)

Pepper (to taste)

Whole Mexican Oregano (to taste)

Marjoram (to taste)

Cumin (to taste)

Onion Powder (to taste)

1 tsp Xanthan Gum

 

Prep:

Blend:

12 Tomatoes

Cooking:

Bring to a boil.  Let simmer for 30 minutes. Stir in Xanthan Gum to coagulate.

Jar and let rest for at least a week.
